1. King's Chef Diner: Downtown

The lavender-hued diner across from Acacia Park is a Springs institution, and its green chili has a serious reputation. Their house sauces come in Hot and Medium, and they mean it: start with medium if you're new to their heat. Breakfast and lunch are served all day.
Pro tip: The Costilla Street "castle" location is private-events only now. For breakfast, head to Bijou & Nevada. Hooked? You can order their green chili to take home.

2. Western Omelette: Downtown

A Colorado Springs breakfast staple since 1992, with Hatch green chili slow-cooked in pork or vegetarian versions (meat-free friends, rejoice). The classic order is the breakfast burrito: scrambled eggs, chorizo and cheese, smothered in green chili with melted cheese on top.
Pro tip: Their Breakfast Burrito & Coffee special is $15, Monday–Friday through Fri., Oct. 30. Weekends are busy, and they don't take to-go orders Saturdays and Sundays from 9 a.m. to 1 p.m.

A family-run local success story. Juan and Robin Madera opened the first one on 8th Street in 2010, and it's grown from there. Juan's homemade green chile is the headliner, and the colossal sausage links from a local farm have their own fan club. With spots in the Westside, the southeast, the north end, Falcon/Peyton and Fountain, there's likely one near you.
